Can you believe it's already been 1 month! We are mid May people. Well, to jump right in, this month the club made Martha Stewart's Tres Leches Cupcakes. I'm assuming to help celebrate Cinco de Mayo. This cupcake was chosen by
Lisa from Smiley's Sweets and Creations. This is another one I have been so excited to make. I love Tres Leches Cake. I grew up tasting all different kinds and really wanted one for my wedding cake. Our wedding was in August and it was outdoors so I was advised against it. I guess one doesn't want their guests food poisoned, but whatever. Anyway, I regress. These turned out great! I loved them and could have had many but I stopped myself at one. Okay, maybe two.
These are made with a quick easy light batter. I whipped up some egg whites with salt and baking soda then added the egg yolks and sugar. I thought these were going to taste really eggie, but ended up being fine. I then folded in a stick of melted butter then a cup of flour. That's it.

Once they came out of the oven, I poked holes in them and brushed on a mixture of evaporated milk, sweetened condensed milk, and heavy cream. Yum. Once these sat for awhile, they were topped with a sweetened whipped cream and a dusting of cinnamon. I think one of the secrets to these are the need to bake these in the Reynold's cupcake wrappers because of all the liquid that is added after they are baked. Also, I had extra of the milk mixture. The recipe says to keep brushing on until all the liquid is used but I felt like it was getting to be too much. I think they turned out perfectly. Definitely a keeper recipe!
Not sure what next month is. I will be back though with a new cuppie!

ReplyDeleteIt's so nice to hear such a positive review of the cupcakes! Yours look wonderful! They were just a bit to wet for me, I didn't like the texture. I'd wanted to try tres leches for a while though so glad to cross it off the list :)
